Tortellini with Roasted Cherry Tomatoes and Mozzarella Cheese

Mozzarella Cheese is a simple but delicious dish that is perfect for a weeknight meal. The roasted cherry tomatoes are sweet and flavorful, and the mozzarella cheese adds a gooey richness to the dish.

Ingredients:

  • 300 g cherry tomatoes, halved
  • 1 garlic clove, minced
  • Olive oil
  • Fresh rosemary sprigs
  • Salt and pepper to taste
  • 100 g Parmesan cheese, grated
  • 100 ml heavy cream
  • A bit of pasta cooking water
  • 500 g cooked tortellini
  • 250 g mozzarella cheese, shredded

Instructions:

1.     Preheat the oven to 350 F / 180 C.

2.     Toss the cherry tomatoes, garlic, olive oil, rosemary, salt, and pepper together in a bowl.

3.     Spread the tomatoes on a baking sheet and roast for 1 hour, or until they are softened and slightly wrinkled.

4.     In a blender or food processor, combine the roasted tomatoes, Parmesan cheese, heavy cream, and pasta cooking water. Blend until smooth.

5.     Pour the tomato sauce into a large saucepan and bring to a simmer. Add the cooked tortellini and stir to combine.

6.     Top with the shredded mozzarella cheese and bake for 15-20 minutes, or until the cheese is melted and bubbly.

7.     Serve immediately.

Tips:

  • For a richer flavor, you can use whole milk instead of heavy cream.
  • If you don't have rosemary, you can use another herb, such as oregano or thyme.
  • If you want a spicier dish, you can add a pinch of red pepper flakes to the tomato sauce.
  • You can also add other vegetables to the dish, such as mushrooms, zucchini, or bell peppers.
  • Serve the tortellini with a side salad or crusty bread.
