This recipe for Tortellini with Roasted Cherry Tomatoes and
Mozzarella
Cheese is a
simple but delicious dish that is perfect for a weeknight meal. The roasted cherry tomatoes are sweet and flavorful, and the mozzarella
cheese adds a gooey richness to the dish.
Ingredients:
- 300 g cherry tomatoes, halved
- 1 garlic clove, minced
- Olive oil
- Fresh rosemary sprigs
- Salt and pepper to taste
- 100 g Parmesan cheese, grated
- 100 ml heavy cream
- A bit of pasta cooking water
- 500 g cooked tortellini
- 250 g mozzarella cheese, shredded
Instructions:
1. Preheat the oven to 350 F / 180 C.
2. Toss the cherry
tomatoes, garlic, olive oil, rosemary, salt, and
pepper together in a bowl.
3. Spread the tomatoes on a baking
sheet and roast for 1 hour, or until they are softened and slightly
wrinkled.

In a blender or food processor, combine the roasted tomatoes, Parmesan cheese, heavy
cream, and pasta cooking water. Blend until smooth.

Pour the tomato sauce into a large
saucepan and bring to a simmer. Add the cooked tortellini and stir to
combine.
6. Top with the shredded
mozzarella cheese and bake for 15-20 minutes, or until the cheese is melted and bubbly.
7.
Serve immediately.
Tips:
- For a richer flavor, you can use whole milk instead of
heavy cream.
- If you don't have rosemary, you can use another herb, such
as oregano or thyme.
- If you want a spicier dish, you can add a pinch of red pepper
flakes to the tomato sauce.
- You can also add other vegetables to the dish, such as
mushrooms, zucchini, or bell peppers.
- Serve the tortellini with a side salad or crusty bread.
